Hamburger Cupcakes for the Interventional Radiology Staff

The entire month I was on interventional radiology, the IR staff made fun of me for having a "Top 20 Burgers in the Nation" list that I was trying to complete.  So I thought it was fitting to make them 20 cupcakes that were in a shape of a burger.

It is quite a simple recipe.  

The buns are yellow cake baked in a cupcake pan, cut into 3rds (with the middle part taken out and saved for making crumb cake:  http://www.dimasharif.com/2011/10/what-to-do-with-leftover-cakes-top-10.html

The beef patty is Ghirardelli chocolate fudge brownie that was spread thinly on a larger pan (8 by 17 instead of 8 by 8) and cooked for 25 minutes instead of the recommended 45 minutes for the 8 by 8 pan.   Check the doneness of the brownies at 20 minutes and add more time if needed.  I simply cut out the beef patty pieces with a wine glass that had the right diameter.  

The lettuce, ketchup and mustard is simply whipped cream cheese frosting with food coloring in it. I did the poor man version of putting them in zip lock bags and cutting out a small hole to squeeze out the frosting. 

Hint: Make sure to put frosting on the bottom of the beef patty too so it sticks to the bottom bun!
